About Marco's Pizza Catering
We started as a pizza operation and grew into a catering one, which shapes how we work. The dough gets the same attention it did when every pie went to a walk-in customer, and the crew still cooks in front of people rather than behind a wall.
WHERE WE CAME FROM
A pizza operation that grew into a catering one
The business grew out of a straightforward idea: pizza is better when it's cooked close to the people eating it. Delivery solves a logistics problem and creates a quality one — the box traps steam, the crust softens, and by the time it reaches the table it is a different food than the one that left the oven. A mobile oven solves both problems at once.
We built the catering side around that single idea, starting with small private parties in and around downtown Los Angeles and expanding into weddings and corporate work as the equipment and the crew grew. The trailer was the first real purchase, and the menu grew out of what we could actually fire at an event rather than what looked good on a printed sheet.

HOW WE COOK
Traditional technique, modern equipment. Dough fermented ahead of the event, stretched by hand, topped to order, fired on stone at high heat — the same method whether we are at a courtyard wedding or a downtown rooftop.
DOUGH AND TOPPINGS
The ingredients we plan around
We take cues from Italian pizza-making practice, which is less about specific recipes and more about patience with the dough. A 24 to 48 hour cold ferment is standard for us. The toppings follow the same logic: fewer ingredients, handled properly, and adjusted to what is actually in season in Southern California when your event lands.
For guests with dietary needs, we can run a separate stretch of dough and a dedicated set of toppings so a gluten-free or vegetarian pizza does not share a peel with anything else. Tell us at booking rather than on the day so we can plan the setup around it.
THE CREW
Everyone on the line can do every job
Everyone who works an event can stretch a pie, run the oven, and talk to guests without slowing the line. That last part matters more than people realize. A catering crew that's comfortable in front of a crowd keeps the mood light when a line forms — nobody feels like they're waiting on a kitchen that forgot about them.
Dough and oven
Hand-stretching, firing, and timing the bake so pies come off the stone in the order guests arrive.
ON EVERY BOOKING
Toppings and menu
Setting the bar, keeping it stocked, and adjusting the toppings list to what your guests actually eat.
ON EVERY BOOKING
Front of the trailer
Greeting guests, explaining the pies as they come out, and keeping the queue moving without pressure.
ON EVERY BOOKING
We keep the team small and consistent rather than staffing up with strangers for every booking. It costs us flexibility on the busiest weekends and it means the crew knows the trailer, the timing, and each other — which shows up on the day when something needs adjusting.
WHAT WE CARE ABOUT
Hot food, honest timelines, and a setup that fits the room
If a venue can't support the trailer, we say so and offer the cart instead. If a date is taken, we tell you immediately rather than leave you waiting for an answer. If your guest count changes, we adjust the plan instead of charging ahead with the original numbers and hoping the line moves fast enough.
Saying no clearly
We are less suited to seated, multi-course dinners and we will say so if that is what you are planning. Knowing what we don't do is part of doing the rest well.
Adjusting without drama
Guest counts move. Weather moves. When they do, we re-plan the stretch of dough and the number of peels rather than pretending the original plan still holds.
A setup that looks right
The trailer and cart are laid out so they read as part of the event, not a food truck parked in the middle of it. That includes where the line forms and how the light falls at night.
Cooking in the open
Guests watch the stretch, the sauce, and the bake. The prep is part of the entertainment, and that only works if the setup actually fits the space it stands in.
WORKING WITH PLANNERS AND VENUES
The questions we ask before we ever load the trailer
We work with event planners, venue coordinators, and couples organizing their own weddings. The coordination is the same either way: confirm access, timing, power, and menu, then show up early. Planners tend to appreciate that we ask specific questions rather than vague ones, because it means fewer surprises on the day.
-
Access. Can a trailer or cart reach the serving spot without crossing a lawn, a staircase, or a locked gate? If not, we plan the cart and a longer carry instead.
-
Power. A dedicated circuit near the setup point keeps the oven and the lights steady. Where that isn't available, we bring our own supply and plan the fuel around the service window.
-
Timing. When guests arrive, when speeches run, and when you want the first pies out. We work backwards from the schedule rather than starting the oven when the crowd is already hungry.
-
Menu. How many styles, how many guests, and any dietary needs worth planning around. Menu choices get locked before the event so the shopping list is real.
WHY LIVE COOKING SUITS LOS ANGELES EVENTS
A city built for a setup that moves
The city has a lot of outdoor event space, from downtown rooftops to canyon properties and beach-adjacent venues. That suits a mobile setup. It also means venues vary widely in access and power, which is why we plan each event around the specific site rather than applying one template to every booking.
A rooftop in the Arts District and a Malibu backyard are two different jobs. One may need a cart and a service elevator. The other may need a generator and a plan for wind off the water. We walk through those details before the date is locked, not on the morning of the event.
EVENTS WE DO BEST
- Weddings with 100 to 250 guests
- Corporate gatherings where the window is short and the crowd is large
- Birthdays and private parties where the host wants something better than a catered tray
We're less suited to seated, multi-course dinners, and we'll tell you that up front.
READY WHEN YOU ARE
Tell us the date and the venue. We'll tell you what's possible.
Dates go fast from May through October, so a quick check costs you nothing. Call the kitchen on +1-213-555-0427 or send the details through the booking page.
QUESTIONS WE GET ASKED
Before you book the oven
Do you only do pizza?
Pizza is the centre of what we do, but it is rarely the whole meal. Most hosts add a salad, a dessert, or a drinks package alongside the pies, and we can talk through what fits the shape of your event. A pizza-only service works well for a cocktail-hour style party, and a fuller spread works better when guests arrive hungry.
How far in advance should I book?
For weddings and larger corporate events, three to six months is a comfortable window, and spring and summer weekends fill first. Smaller private parties can often be arranged with a few weeks of notice, and last-minute enquiries are worth sending anyway because cancellations happen. If the date you want is taken, we will tell you straight away rather than holding you in limbo.
What do you need from the venue?
A clear path to the serving spot, a power source nearby, and a little space to set up the toppings bar. Some venues have a designated catering zone with all of that ready; others need us to bring our own supply and plan around a longer carry. We ask these questions early so there is no scramble on the day.
Can you handle dietary requirements?
Yes, with notice. Gluten-free dough and vegetarian options are part of the standard menu, and we can run a separate stretch of dough and a dedicated set of toppings so nothing is cross-contaminated. Tell us at booking rather than on the day so the setup and the shopping list reflect it.
Where are you based, and do you travel?
We are based at 1200 S Figueroa St in downtown Los Angeles and travel across LA County. Travel beyond the county is possible and we will tell you honestly whether it makes sense for your date. Kitchen hours are Monday to Friday, 9:00 AM to 6:00 PM, with weekends reserved for events.
THE NEXT STEP
Come see the oven in person
The best way to judge a mobile pizza caterer is to watch one work. We're happy to walk you through the trailer, the menu, and the plan for your date — no obligation, no pressure.
